Richer than pork, sweeter than beef, and the only meat we sell that does some good by being eaten. One ounce, individually wrapped, shelf-stable.

What wild boar tastes like

Pork with the volume turned up. Deeper, slightly nuttier, with more character than anything from a commercial hog operation. It carries enough fat to stay rich without going greasy, which is why BBQ works so well on it — the sweetness has something to hold onto.

The invasive species you can eat

Feral swine are one of the most destructive invasive species in the United States. They root up cropland, foul water sources, outcompete native wildlife, and cause damage measured in the billions of dollars a year. Texas has more of them than any other state — several million, by most estimates — and no realistic prospect of eliminating them.

Which makes this the rare case where eating an animal is the environmentally useful choice. Every wild boar that becomes food is one that isn't tearing up a field.

Stick or flat?

Both are chopped and formed from the same meat. The stick is round and cased, easy to break and eat one-handed — the one for a truck console or a pack. Our wild boar flat is a wider strip with more surface for the smoke, and a longer eat.

Why it's blended

Like every wild game meat we carry, this is blended with other meats. There's a regulatory reason as well as a practical one — feral swine aren't covered by mandatory USDA inspection the way farmed pork and beef are, so blending is what brings the whole product under the federal stamp. The blend is what makes it good and what makes it inspected.

How it's made
