Why BBQ suits wild boar

Boar carries more fat than most wild game, which changes what seasoning can do. Sweetness needs fat to work — on a lean meat like elk or antelope, a BBQ glaze sits on top and slides off. Here it soaks in and becomes part of the flavor rather than a coating.

The result is closer to good barbecue than to jerky with barbecue seasoning on it.

The invasive species you can eat

Feral swine are one of the most destructive invasive species in the United States. They root up cropland, foul water sources, outcompete native wildlife, and cause damage measured in the billions of dollars a year. Texas has more of them than any other state — several million, by most estimates — and no realistic prospect of eliminating them.

Which makes this the rare case where eating an animal is the environmentally useful choice. Every wild boar that becomes food is one that isn't tearing up a field.

There's a regulatory reason as well as a practical one — feral swine aren't covered by mandatory USDA inspection the way farmed pork and beef are, so blending is what brings the whole product under the federal stamp. The blend is what makes it good and what makes it inspected.
